Cranberry Spinach Salad

Cranberry Spinach Salad

3 cups cooked brown rice
1 box/bag of baby spinach
3/4 cup dried cranberries
1/4 cup scallions, minced
2 Teaspoons poppy seeds
1 1/2 Tablespoons Earth Balance buttery spread
3/4 Cups sliced almonds
2 Tablespoons sesame seeds

1/2 tsp. paprika
2 Tablespoons toasted sesame oil
2 Tablespoons olive oil
1/4 Cup mirin
1/4 Cup apple cider vinegar

Add rice, spinach, cranberries, scallions and poppy seeds in a large bowl.
In separate bowl, add dressing ingredients and stir.

In a skillet, toast the following until golden:
Earth Balance, almonds and sesame seeds

When cooled, add to rice and spinach mixture. Pour dressing over mix and toss to incorporate.
